a device known as a calorimeter determines the calories. the food is dehydrated then placed inside of a chamber that is surrounded by water. the substance is ignited and the changes in the surrounding water temperature determines the calorie content (a calorie is a unit of energy that raises 1cm^3 of water by 1 degree celsius)
